Preparation
- Marinate the Chicken: Debone the chicken thighs and cut them into strips. Marinate with cornstarch, soy sauce, and freshly ground black pepper. You don’t need a long marination—just prepare the chicken first, and by the time you’re done with the other ingredients, it’ll be ready.
- Make the Black Pepper Sauce: Combine a generous amount of black pepper, soy sauce, dark soy sauce, oyster sauce, a pinch of salt, and half a bowl of water. Mix well.
- Prep the Veggies: Slice the red and green bell peppers into strips (use non-spicy varieties). Slice the onion into strips. Peel and cut the potato into chunks. Yellow-fleshed potatoes are ideal as their higher starch content makes the sauce thicker during cooking.

How to Cook Black Pepper Chicken with Potatoes
Step 1: Heat oil in a pan, then pan-fry the chicken strips. I like to cook them until they develop a slight char for extra flavor. Thanks to the cornstarch, the meat will remain tender even with longer cooking.

Step 2: Once the chicken is cooked, add the potato chunks and stir-fry together. Potatoes take longer to cook, so let them fry a little longer here.
