Hot and sour shredded potatoes are commonly found in Chinese restaurants. Today I’ll be sharing a home-style braised sliced potatoes. The ingredients and seasoning are simple, highlighting the natural flavor of the potatoes with a touch of scallion fragrance.
This dish can even be enjoyed by people of all ages since it’s not spicy and has a mild flavor. If you’ve grown tired of other potato dishes or have had too much oily food lately, give this recipe a try.
Ingredients
- Potatoes: Unlike hot and sour shredded potatoes, you’ll need potatoes with less starch, the kind that is whiter inside. Choose potatoes with more starch which is yellower inside. Such kind of potatoes guarantees a soft texture which is the main feature of this dish. Peel and thinly slice the potatoes as shown in the picture. Do not cut the potato slices too thin, approximately 3 millimeters thick.
- Green pepper: Chopped. This is optional. I add it for color and a hint of pepper flavor, but the one I use is not spicy. If you prefer spiciness, you can use small chili peppers or spicier peppers.
- Scallions: Finely chopped

Seasonings
- Oil
- Light soy sauce
- Salt
How to Cook Braised Potatoes
I used an iron pan for this dish, but other flat-bottomed pans will work too.
Step 1. Heat the iron pan, add oil, and once hot, stir-fry the potato slices. You don’t need much oil for this dish, as we’ll add water later to simmer, and a bit less oil won’t make it dry. Stir-fry for about 1 minute on high heat or longer on lower heat.

Step 2. Once the potato slices become somewhat translucent, add an appropriate amount of water to simmer.

Step 3. When the water boils, add salt and light soy sauce for seasoning.

Step 4. When the potatoes are simmered until soft enough to break with chopsticks, add the green pepper. It takes about a minute for the pepper to cook. Add the scallions and it’s ready to be served.
