Crab Roe Noodles 【蟹黄面】

I haven’t cooked this recipe myself. I once tried this crab roe noodle dish at a restaurant and was absolutely amazed by the taste, which made me curious about how it’s made. I searched online and, based on my preferences, came up with the recipe below. If you’d like to try, let’s do it together!

Ingredients

  • 3 crabs, about 150g each
  • 2 green onions, cut into large sections
  • Ginger: divided into two portions, one of about 25g for the crab roe sauce, and three slices for steaming the crabs
  • 150g noodles
  • 4 tbsp lard
  • 1/2 tsp oyster sauce
  • 1/2 tsp light soy sauce
  • 1 tsp Shaoxing wine
  • 1/4 tsp salt
  • 1 tsp cornstarch
  • Hot water

For best results, use Chinese mitten crab, which has more roe. Before cooking, mix the cornstarch with 100ml water to make a slurry.

How to Make Crab Roe Noodles

Step 1. Use a brush to thoroughly clean the crabs’ shells. Place each crab belly-up and top each with a slice of ginger. Steam the crabs over cold water for 15 minutes. Once cooked, separate the crab roe and meat, setting them aside. Don’t discard the crab shells.

Step 2. In a pan, add 2 tbsp of lard, ginger, and green onions, then place the crab shells in the pan to sear on low heat, being careful not to burn them. Once the shells are crispy and aromatic, add hot water to cover the ingredients and bring to a boil on high heat. Simmer for 5–10 minutes, depending on how much liquid is in the pan. Once done, strain the broth into a bowl, discarding the crab shells, to leave a clear crab stock.

Step 3. In a pan, add the remaining 2 tbsp of lard and sauté the crab roe over low heat until fragrant and releasing oil. Then, increase the heat and add the crab meat, soy sauce, oyster sauce, and a splash of Shaoxing wine which removes any fishiness and enhances flavor. Stir them until well mixed. Pour in the prepared crab stock, bring to a boil, then reduce the sauce by simmering. Add salt and the cornstarch slurry, stirring continuously until the sauce thickens to avoid sticking.

Step 4. Cook some noodles. Adjust the amount of noodles based on the amount of crab roe sauce.

Place the cooked noodles onto a plate, pour the prepared crab roe sauce over, and mix well. Now you can enjoy the incredibly fresh and unforgettable Crab Roe Noodles! Enjoy while hot, as it may taste fishy if it cools down.
