Chinese Pork Stir Fry, also known as Pork and Pepper Stir Fry, is a well-known home-cooked dish in China. Despite its simplicity, the taste may vary from household to household.
I come from a province known for its love of spicy food, and my family is no exception. We prefer to use plenty of spicy peppers, even with more peppers than meat.
Having lived in Shenzhen for many years, my tolerance for spicy food has waned. When I cook it myself, I usually opt for mildly spicy peppers, or sometimes even bell peppers, which turn out delicious too.
This dish is simple in both ingredients and cooking method, making it difficult to go wrong. Let’s give it a try together!
Ingredients for Chinese Pork Stir Fry Recipe
- 200g pork, thinly sliced
- 1 green pepper, sliced
- 1 red pepper, sliced
- 2 cloves garlic, sliced
- Light Soy sauce
- Dark soy sauce
- Oil
- Salt
- Cornstarch
When selecting pork, choose cuts with a good balance of fat and lean meat. The fat will render during cooking, adding more flavor to the dish. Thinly slice the lean meat for better flavor absorption and tenderness.
I’ve chosen two colors of peppers for visual appeal, but you can also use non-spicy bell peppers. Due to their thickness, bell peppers are typically diced.

Marinating the Pork
After slicing the lean pork, place it in a dry bowl. Add 1/4 tsp soy sauce, 1/8 tsp dark soy sauce, and 1/2 tsp cornstarch. Mix well until no liquid remains in the bowl. Then, add 1 tbsp oil and continue mixing until evenly coated.
The oil helps seal in moisture of the pork during cooking, while the cornstarch tenderizes the pork. Be cautious not to use too much cornstarch, as it may mask the natural flavor of the meat.
How to Stir Fry Pork
I used a non-stick pan for this dish.
Step 1: Wipe the pan dry and heat over low heat. Add the fatty pork and slowly render the oil. If there isn’t much fat, add a little oil at the beginning. More oil makes the dish taste better.

Step 2: Once the fat has rendered, increase the heat to high and add the lean pork, quickly stir-frying until separated. Add the garlic and keep stir-frying

Step 3: When the lean pork is about 60% cooked, add the peppers, and continue stir-frying. Season with a pinch of salt. I prefer crispy peppers, so I add them a little later, ensuring they don’t become too soft.

Step 4: Once the peppers are cooked, the dish is ready to serve. The entire process takes about 5 minutes.
