Do you think steamed egg is too boring? Let’s add some extra ingredients—how about clams? It’s a perfect match because they not only add umami flavor but also bring a nice texture. Trust me, if you love clams, you will enjoy this dish.
Ingredients
- 12 clams ( must be fresh)
- 3 eggs
- 150ml water
- 1/8 tsp salt
- 1/2 tsp light soy sauce
- 1/2 tsp sesame oil
- 1 green onion, chopped (optional)
You don’t have to use exactly 12 clams. You can adjust the amount based on the size of your dish or bowl and the clams to avoid overcrowding and waste.

How to Deal with Clams
If the clams are thoroughly clean, a quick rinse will suffice, and you can proceed with cooking. Otherwise, place the clams in clean water, and add some salt, and a little oil. Soak the clams for about two hours. Be mindful of the temperature, ideally around 20°C. If the water is too cold, the clams might not open. After 2-3 hours of soaking, they will release a lot of sand.
How to Make Steamed Egg with Clams
Step 1: Blanch the clams. Add them to a pot and cover with water. Boil the water, and once the clams open, remove them. If there’s foam, rinse it off with clean water. You can save the blanching water to mix with the eggs—it adds extra umami flavor to the eggs.

Step 2: Crack the eggs into a bowl and beat them. Add 150ml of water (or the clam blanching water) and a bit of salt. Strain the egg mixture into a dish or a large bowl.

Step 3: Add the clams to the egg mixture.

Step 4: Place the dish into a steamer. Cover the dish with another plate, start steaming from cold water, and wait for 15 minutes until the eggs are set.

Step 5: While hot, sprinkle chopped green onions (if using), and drizzle the light soy sauce and sesame oil. Now, it’s ready to eat!
Note: This dish is best enjoyed while hot, as it can become quite fishy when cold.
