My mom often says, “The simpler the dish, the harder it is to stir-fry.” Many braised or stewed dishes may seem complex, but without much technique, they won’t taste bad as long as the seasoning is right.

However, stir-frying green leafy vegetables, including lettuce, is truly a test of skill. If not done well, it can be horrible to eat and the color may turn yellow, making it unappetizing.

I love lettuce, but initially, no matter how I stir-fried it, it didn’t taste good, and the color tended to be yellowish, lacking appeal. After calling my mom for advice, she shared a few crucial points, and indeed, I quickly grasped the essentials, successfully stir-frying vibrant and tender lettuce. This recipe applies to other leafy greens as well.

Key Points for Stir-Frying Delicious Lettuce

High Heat: All Chinese-style stir-fried greens require high heat. This ensures quick cooking in one to two minutes, leading to a crisp and tender texture. Lower heat would require a longer cooking time, leading to loss of moisture and compromised texture and color.

Pre-salting: Add salt before putting in the lettuce. This extracts some moisture from the lettuce, preventing it from drying out during high-heat stir-frying. This step complements the subsequent intense stir-frying.

Slightly More Oil: A bit more oil prevents excessive loss of water from the vegetables during heating and helps avoid oxidation. This makes the lettuce crisper and greener.

  • Lettuce: Washed and drained. Leave a bit of moisture because it prevents drying during subsequent high-heat stir-frying.
  • Garlic: Minced.

How to Choose Lettuce

Select lettuce with thick and green leaves. My experience tells me that light green leaves tend to be more tender. Avoid dry or wilted leaves. Gently pull a small part of a leave, if it tears easily, it is usually fresh.

In addition to checking the leaves, pay attention to the stem. It should have a white hue for freshness. Moreover, you can also pinch the root with your fingers. If it is crisp, then it should be relatively tender.

Cooking Steps

I used a non-stick pan with a coating for this dish.

Step 1. Wipe the non-stick pan dry, add oil, and heat it. Once hot, add some salt. You won’t need additional salt later if you add enough now.

Step 2. Add minced garlic and stir-fry until fragrant.

Step 3. Once you smell the garlic, add the lettuce and quickly stir-fry over high heat. When the lettuce softens slightly, add a bit of oyster sauce.

Step 4. When the lettuce is cooked to your liking, remove it from the heat. Don’t overcook; crisp and vibrant lettuce is the goal.
